Banana Blueberry Muffins


Oops! Another 2 months went by without a single post! I made these muffins a while back and just kept forgetting to post them. These are by far, the best muffins we have ever had. I got them out of a cookbook called Eating for Autism but of course made changes for what Austin is able to eat. I also just received a 5 lb. bag of Jules Gluten free flour so I'm going to try to make them again tonight trying using that flour. On a side note, I made the discovery of Tofutti mozzarella cheese slices today so pizza may be on the menu very soon!

Banana Blueberry Muffins

2 very ripe bananas mashed
1/2 c. brown rice flour
1/2 c. sorghhum flour
1/2 c. canola oil
1/2 c. honey
1 tsp. apple cider vinegar
1 tsp. vanilla
Egg Replace for 2 eggs
1 tbsp baking powder
3/4 tsp. xanthan gum
1/2 tsp. salt.

Mix the dry ingredients in one bowl and the wet ingredients in another. Add the wet ingredients to the dry. Fold in the blueberries and pour into muffin tins. I usually use a measuring cup to make sure I get them even. Bake at 350 for 18-20 minutes. My batter was a little thinner than I would have thought but they rose and browned nicely!

How was the Jules Flour Blend? I was interested in Jules and Gluten Free Mama's Blend and would really like to know your opinion on them.

Well to be honest, I haven't had much success with it.. It's supposed to be amazing and should be able to use it 1/1 in any recipe that calls for regular flour. However, I have pretty much only tried it for a few types of muffins. At some point, I'd like to make some "pop tarts" and see how it does then.
